Packed with pumpkin pie spice, pumpkin puree and brown sugar, these delicious donuts are a great way to start your morning. Top your treats with a coffee glaze or make a classic plain glaze. Either way they go great with a cup of your favorite morning beverage.

Ingredients:

  • All-purpose flour 2 1/4 cups
  • Granulated sugar 2/3 cup
  • Baking powder 2 teaspoons
  • Light brown sugar, firmly packed 1/3 cup
  • Salt 1 teaspoon
  • Pumpkin pie spice 2 teaspoons
  • Pumpkin puree 1 can (15 ounces)
  • Eggs 2
  • Milk 1/2 cup
  • Vegetable oil 1/4 cup

Glaze:

  • Milk, divided 1/4 cup
  • Instant coffee 1 teaspoon
  • Vanilla extract 1/2 teaspoon
  • Confectioners’ sugar, divided 1 1/2 cups

Prevent your screen from going dark as you follow along.

  1. Preheat the oven to 375°F.
  2. Spray the Donut Pan with vegetable pan spray.
  3. In a large bowl, combine the dry ingredients; flour, baking powder, granulated and brown sugars, pumpkin pie spice and salt.
  4. In a medium bowl, whisk together pumpkin, eggs, vegetable oil and milk. Add pumpkin mixture to flour mixture; beat until just combined. Fill each cup in doughnut pan until it’s approximately 2/3 full.
  5. Bake the doughnuts for 10-14 minutes or until the tops of the donuts spring back when touched. Let them cool in the pan for 4-5 minutes before removing.
  6. For the coffee glaze, in a small bowl, stir together 1 tablespoon of milk and instant coffee until the coffee is dissolved. Whisk 1/2 cup confectioners’ sugar until it’s smooth.
    For the vanilla glaze, in a medium bowl, whisk together the remaining 3 tablespoons of milk, vanilla and 1 cup of confectioners’ sugar.
  7. Dip tops of donuts in vanilla glaze. Immediately drizzle with coffee glaze. Remember these donuts are best served fresh.
