基本麵糰(皮) (可做 8 個)

  1. 黄油室温软化，加入糖，打至颜色变白，体积变大。
  2. 分两次加入蛋液，每次加入都要搅拌均匀。
  3. 加入奶水，彻底拌均匀，最后加入蛋糕粉和卡士达粉混合，放入冰箱30分钟后分割每个30g备用。

基本麵糰(餡料)

  1. 將蛋黃、砂糖和所有液體攪拌均勻。
  2. 接著下麵粉，用打蛋器攪拌到無顆粒狀態。
  3. 之後把其餘粉類加入，混合均勻後加入無鹽奶油，微波30秒。
  4. 取出攪拌再打20秒。
  5. 不斷重覆此動作，直到奶黃餡料成塊狀即可放入冰箱冷藏一晚。
  6. 將奶黃餡分割每顆16~17克重後滾圓備用。

組合

  1. 將每顆奶黃餡包入烤熟的1/4鹹蛋黃。
  2. 取一個餅皮包入一顆內餡後，用模型壓出所喜愛的形狀。
  3. 放在烤盤上，刷上蛋黃後放進烤爐，以180°烘烤18～20分鐘。
